Crustless Zucchini Pie
This summer, my Mom made this while we were at her house and again when we were just there. And, it is delish but even better my children love it which means I will definitely be making it again!
Crustless Zucchini Pie
1 large onion, finely chopped
1/2 c. vegetable oil {I used 1/3 c.}
1/2 c. grated Parmesan cheese {I didn't have any, so used co-jack}
4 eggs, beaten
minced parsley and basil
3 cups grated zucchini
1 cup Bisquick mix
1 cup shredded cheese
Stir eggs and oil together and then toss everything else in and stir. Divide between two glass pie pans sprayed with cooking spray and bake at 350 for about 35 minutes or until browning. Yum! It's also great leftover.

I am also pinning this because I was looking for a recipe to use zucchini. Every week, I walk past it in the produce section and it seems to call out to me! I know its nutritional benefits, but only sweet recipes in which to use it.
Can you tell me approx how much of the thyme and basil?

Did you stick with exact measurements? Because I'm looking at the amount of cheese and thinking it could only get better by at least doubling it. But then again, I have a tendency to want to add cheese to everything to make it better. This is probably TMI, but at least five times last week I planned meals that had a hearty amount of cheese in at least one dish.
I just have to laugh at this a little bit...I have made something very similar (if not exactly the same.) I LOVE it, but haven't made it in forever since one of my children actually started gagging when he was eating it. They usually aren't super picky eaters either. Nothing against the recipe, it is quite delicious. It was just my kiddos weird reaction. -)
