Applesauce Oat Muffins

I can't believe I've never posted this recipe before! I've been making these for a number of years and they are so tasty! Recently, I substituted peach butter for the applesauce and have also made them with pureed sweet potato - regardless, they are always delish!

1 1/2 c. oats
1 1/4 c. flour
1/2 c. brown sugar
1 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. cinnamon
1 c. applesauce
1/2 c. milk
3 Tbsp. oil
1 egg white

Topping:
1/4 c. oats
1 Tbsp. brown sugar
1/8 tsp. cinnamon
1 Tbsp. butter, melted

Bake at 400 for 16-18 minutes

I am going to print out this recipe and add it to my cookbook!

Recently, I made your apple muffins and took them with dinner to a family from my church. Their daughter just told me that they loved them...but her brother got 3 and she only got 1! Guess I'll be making them again.

Thanks for the recipe. We love to have cookies to eat when us "old folks" take our pills at night.

I don't comment much, but I just want you to know how much I love your blog. It's like a breath of fresh air and I love your simple and doable ideas. Thank you so much for sharing with us.
