"Mama, can we have homemade bread tomorrow at the park?" Emily asked. We were in the car on our way home from a weekend trip (this has been a few months now!) - and my heart had mixed feelings.
Getting home from a trip around dinner time and needing to leave the house by 9am the next morning. Homemade bread? Yet, I was also thrilled that she would ask for something healthy and homemade!
YES! Homemade Bread was made!! Here is our very favorite bread ~
Mix together with whisk:
1 1/2 c. hot water
1/3 c. oil (I use 1/2 olive oil and 1/2 coconut oil)
1/3 c. honey
2 tsp. sea salt
2 Tbsp. Lecithin
1 tsp. gluten
1/2 c. ground flax seed
2 c. freshly ground flour
Add 3 c. flour and 1 Tbsp. yeast - mix with dough hook for ten minutes.
Remove from mixer and cover with a towel - let rise for 45-60 minutes.
Remove dough from bowl and hit against counter several times to remove air bubbles.
Shape into a loaf and re-cover with towel. Let rise 20 min. Bake at 350 for 35 minutes - enjoy!

I've been thinking about making bread again. Where do you find your coconut oil? The kind I tried was so strong that I couldn't use it. I like your bread pan; it looks much longer than the ones I have.
Looks wonderful! Oh how I wish I made homemade bread....oh wait maybe not. That may become dangerous in our house. I am on a quest to make more homemade foods. So I am about to spend a day next week making homemade snacks for my boys.
Maybe I'll try homemade bread soon.
We did make our own bread all the time prior to this move but I've been negligent in the past months. First my grain mill had to be replaced due to a manufacturers defect (which they did promptly!!!), then the house has been in total disarray, and thirdly we are no longer homeschooling. The different schedule at the public school really through me for a loop...
However this past week all three of our boys asked when I was going to resume making homemade pizza and bread... I was slain with guilt! With all the busy work, and yes that is just what it was plus a good dose of pity party/self absorption, I had neglected my family. So times are a changing... The house is clean, the laundry is being kept up, and regular meals are being prepared. Freezer meals are being concocted and homemade bread and jam will soon be back on the menu!!
I make bread all the time, but I use a bread machine, it goes much faster, you get the smell but I miss the work of making it!
I do a combination of making my own/buying a loaf of whole wheat at the grocery. I always make bread from the "Artisan Bread in Five MInutes a Day" book. The only drawback is my small 'fridge gets completely overwhelmed by the large dough bucket that is part of the bread process!
My husband is the one who makes homemade bread! :)
We recently learned that my husband cannot eat white flour products, so we are eating whole-grain, and he is experiencing with making various whole grain breads.
I've never been a fan of making bread, so I don't mind at all that he makes the bread!
I do occassionally. :)
I'll have to try your recipe!
Your bread pan looks very interesting! I don't have one that really bakes up nice.
I'm saving my gift money to buy a Boscho stand mixer. I cannot wait to have something that will knead bread for me! I've tried the Artisan Bread in 5 Minutes a Day, too. We like it, especially for pizza, but I just love a good soft loaf of traditional bread!
I make our own bread fairly often and also supplement what I make with store bought. Artisan Bread in 5 Minutes a Day has absolutely changed my life for the better! I just tried and tried the old-fashioned way for 9 years and was about to give up when I got that book for my birthday. Hooooooorah! It is fabulous and I'm never going back to the other way of doing it - somehow their recipes turn out better than the old ones for me. I give this book as a wedding present sometimes now.
Yes, I try to bake bread at least every couple of days...so much healthier and way less expensive.
Thanks for sharing this recipe.
Lovely Bread...Your Bread Pan and Mill look offly familiar : )...
I have the same ones the NUTRIMILL and the Pans...did you shop at Pleasant Hill Grains ? I use the Electrolux Mixer..which one do you use...? I also use the Bread For Life Recipe book...Love IT..
Makes Me Want to go and Bake Some Bread...
Just a few questions....
Can you tell me the type of wheat grinder you use? Do you like it? Also, where did you get you big loaf pan?
Thanks so much!
Yes! I bake a batch of five loaves for us once or twice a month. I really enjoy baking my own.
Occasionally, I'll purchase a couple of loaves from the bakery outlet that's close to my house, but I do the bulk of our bread needs myself.
I have a bread pan like that, that I LOVE!! I got mine at IKEA!
Now I would love to know where to get lecithin??
I have a sourdough starter someone at work gave me last year. It's the kind you feed every few days. I've made pizza crust with it, too. I often use whole wheat flour because it's healthier.
coconut oil in bread - what an intriguing idea! i happen to own coconut oil. hm.
i make bread using the Artisan Baking in 5 Minutes a Day style. love it. but. think i'll be trying your recipe tomorrow. :o)
