Thanks for all the
great ideas on helping stock my freezer! I have divided everything I want to do into the next few days (though it may take me longer) and will share with you what I came up with!
Yesterday, I did the following:
Sliced two large loaves French bread and put in Ziplocs:

Browned 5+ pounds of ground beef:

Made two pans
Easy Lasagna: (though I don't care for tomatoes, I can handle lasagna once in a while and I know this freezes well)

I also cooked and crumbled three pounds of bacon and stored in a ziploc - but didn't get a photo.

Great job! Such a great thing to be prepared! :)
This all looks great! I am amazed at your energy!
I am sure it is helpful to know your freezer is getting stocked. Great job!
Monica, each day I am amazed at how motivated you are and how much you accomplish.
Glad to hear that both you & your friend are doing well.

I was just wondering what you do with so much cooked & crumbled bacon? Do you have a lot of recipes that call for it? I have some in my freezer from when we purcahsed 1/2 a pig and I need to get it used up before it sets in the freezer too long.
Thanks

Way to go, Monica. You will be glad you're doing all this work now. It will definitely pay off. Just wanted to tell you about another great blog I just came across.

Although pulling a meal out of the freezer is definitely easier, a crockpot meal is the next best thing. Hope your pregnancy is going well. We just found out we're having a boy.
Yummmo ! Everything looks delish !
I think I'll try your coffee cake, that's a favorite around here.
You are an amazing woman, Monica. So sweet, kind and caring..and amazing energy!
Wishing you the best and thinking good thoughts and prayers for you and the arrival of the new baby.
Wow! I thought you were taking it easy this week ~ there won't be much for me to do when I'm there after baby arrives! Love you, Mom
I love the french bread idea!
I also like to throw chicken and marinade into a bage together to freeze--when I'm ready to eat it, just thaw, skewer, and stick on the grill (which means DH has to cook it!)
Thanks for the great tips--your blog is unbelievably helpful and inspiring!
I'm doing freezer meals this week to prepare for our move at the end of the month. I'll just be cooking double or triple each day and freezing it. Thanks for the inspiration!
Monica, my goodness, you have been a busy bee! That's is going to be such an amazing feeling to know you have a freezer full when your newest little blessing arrives. About freezing the swiss chicken bake ~ I bake it before freezing.
I just found your blog through The Draper house blog and I have to say I am so impressed. You are so very talented! I will be back to read more of your posts, you are so inspiring. Thanks
Kim
Wow, you've been busy! You will love those pre-prepared meals once that sweet baby is here.
This is such a smart thing to do. For each of my 4 babies, I prepared and froze at least one month of meals, so that no matter what, we ate well.
I made sure to bake and freeze lots of chocolate chip cookies too!
Wow! Great job! You are going to be really happy that you did all of that when the baby comes.
PS- I think I would say you are in the nesting phase :) Run with it!! :)
Yum! Your dishes all look so delicious- I know that your family will be blessed by your efforts.

Angela - with the bacon, I'm planning to use some of it to make Twice Baked Potatoes tomorrow. I'm planning to make extras and put them in the freezer. We also love wraps and a BLT wrap is one of David's favorites. Crumbled bacon just makes it so much quicker. This will also be used for quick sprinklings in other wraps or salads. I imagine it will last us a while as it is quite a bit!
Miriam - Congratulations! Thanks for the Crock Pot link as well!
Hello Monica. I've just found your blog via Meredith's.
You've done some excellent work there. Do you restock your freezer on a regular basis or just when it needs it?
Way to plan ahead!! You are amazing. You make me tired just reading about it, and I'm not pregnant! :)
Blessings,
Joy
Hi Rhonda Jean!
This big freezer project is just because we are expecting a new baby very soon. I've wanted to do this for a while - but haven't gotten it done. It may become a habit!
