Amelia's Banana Cake


This yummy cake recipe came out of an old issue of Victoria magazine - which is now out of print.

Their recipe calls for a cream cheese frosting, but I really like it with chocolate!

Amelia's Banana Cake
4 Tbsp. butter or margarine
1 1/2 c. sugar
2 large eggs
1 c. mashed banana
1 1/4 c. white flour
1 c. whole-wheat flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1/4 c. buttermilk

Mix all together with an electric mixer and pour into two - 9 inch cake pans that have been greased.

Bake at 350 for 25-30 minutes.

Chocolate Buttercream Frosting (Betty Crocker Cookbook)
3 c. powdered sugar
1/3 c. margarine or butter, softened
2 tsp. vanilla
3 ounces unsweetened baking chocolate, melted and cooled (I use 3T. cocoa and 1 T. oil to equal one square)
2-3 T. milk

Mix together and frost cake!

I made a banana cake for the first time in December... It had a peanut butter frosting that tasted a bit like peanut butter fudge. Old-fashioned and yummy!
