David's Favorite Pancakes

I made pancakes for dinner recently modifying a recipe we already loved and David said they were some of the best pancakes he's had! Because I need to remember what I did and just in case you want to try them too - here is the recipe. I think they were so yummy because of the fresh ingredients I had available - farm fresh eggs, freshly milled flour and honey.

2 c. freshly milled flour (I used hard white)
2 eggs
1 1/2 c. milk
2 Tbsp. honey
4 Tbsp. oil
2 Tbsp. baking powder

Mix with wire whisk and cook by 1/4 c. on hot griddle. Serve with homemade syrup. Mmmmmm! My batch made about 20 pancakes.

Pancakes may be my favorite food...yours look delicious! I'm glad you had fun with the coffee staining. I use cardstock for the tags, because the strings don't rip the paper when it's wet. I just use regular printer paper for the writing paper. Baking stiffens it into the perfect weight. Hope this helps!

In the past couple of years I have tried to modify my cooking. Eat healthier meals.
I am going to have to try your pancake recipe. I have never made mine with honey before.

We just did pancakes last week for dinner. My daughter made them, I want all my girls to be able to cook. I love that your recipe has honey in it, which is one something I am looking to cook more with.

What's the health benefit of grinding your own flour? It's still white flour right? Just curious, I saw another blog and she liked to grind her own also.

Great question ~ My knowledge is very minimal and if you asked me to explain it I'd point you to other spots for more info.

However, my basic understanding is that when you leave all the nutrients (26 vitamins) in freshly milled flour, it will go rancid at room temp in just a very short time. Therefore, flour companies are required to remove the healthiest parts of the wheat so that it will not go rancid.

This means that they are removing ALL the nutrients from the flour. They do add several back in, but it is not all 26 - most sources said only four were added back in.

With fresh eggs...mmmmmm....yummy fresh goodness. How do you store your home made syrup? I have plans to make the syrup and debated how I would store it. So glad you are loven' your mill! Sounds so neat.

I store my syrup in a canning jar in the refrigerator. I've had no trouble with it keeping well and I just pour it out into a little pitcher to serve.

Can't wait to try these. This recipe is similar to mine, except it has more baking powder (for fluffier pancakes....yummm!) and honey for a little sweetness. I can see why they're David's favorites.
