Blackberries for Pepaw
Before leaving South Carolina, our wild blackberry bushes were absolutely covered with little bitty green berries promising a good harvest in days to come. I was so hoping they would ripen up quickly and be ready for us to bring west with us so my Dad could enjoy the bounty of the freshly picked blackberries from our garden!
But, in coming west earlier than we usually do in the season, they were still green when we left. Rachel took all of this in and when she was offered $1 to spend at an Aldi's along the way for a snack, she wanted to spend her money on a container of blackberries for 0.99.
Oh.my.heart.that.girl.
So, blackberries were purchased and put in the travel insulated bag and brought to Colorado for Pepaw. And, it was my pleasure to whip up a simple small blackberry cobbler for dessert one night.
Blackberry Cobbler {we adjusted for a smaller recipe since we only had one container of berries}
Recipe from Real Simple
3 half-pint containers fresh blackberries or one 16-oz. bag frozen berries
2 Tbsp. powdered sugar {I used granulated and probably a scant 1/4 c.}
2 c. pancake mix
1 c. milk
2 eggs {for 1/3 of the recipe, I used one egg and a little more pancake mix}
Stir together berries and sugar in a prepared 8" square baking dish. Combine remaining ingredients and spread over the berries. Bake at 375 for about 30 minutes. Sprinkle with 1 Tbsp. additional sugar after cooling. Serve with ice cream or whipped cream.
