Pumpkin Chocolate Chip Cookies

It's a Friday afternoon not long ago and I need to make a dessert for a gathering in the evening. Rachel requests homemade chocolate chip cookies - which is completely fine with me!

So, I set the butter out to warm up and we have school and I keep thinking about the open can of pumpkin in my fridge. Hmmm, wonder how that would taste added to cookies? I pondered cinnamon and spicy flavors - but after tasting the dough I deemed them fine as is and baked away.

Perfect for a little impromptu overly-warm Fall afternoon tea party!

I have absolutely no doubt whatsoever that if I looked on Google or Pinterest there would be a host of recipes boasting a title similar to the one I've chosen - but I did not consult any outside source and used a family favorite recipe and just added pumpkin and ground flax! So, here you go! A sweet blog reader, Eunice, sent me this recipe a few years ago and we love it!

1 c. shortening
1/2 c. butter
1 1/2 c. sugar
1 1/2 c. brown sugar
2 tsp. vanilla
4 beaten eggs
4 1/2 c. flour (I use a mixture of 2/3 hard white and 1/3 soft white freshly milled flour)
2 tsp. baking soda
2 tsp. salt
1 c. pumpkin
1/2 c. ground flax seed
2 c. chocolate chips

Combine shortenings and mix well. Cream in sugars. Add vanilla, eggs, soda, salt and flour. Mix well. Add in pumpkin, flax and chocolate chips. Drop onto cookie sheet and bake at 350 for 10 minutes.

How yummy! Your cookies remind me of the pumpkin chocolate chip baked oatmeal I made the other morning. I personally think chocolate goes with anything!
