I can't believe I've never posted this recipe before! I've been making these for a number of years and they are so tasty! Recently, I substituted peach butter for the applesauce and have also made them with pureed sweet potato - regardless, they are always delish!
1 1/2 c. oats
1 1/4 c. flour
1/2 c. brown sugar
1 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. cinnamon
1 c. applesauce
1/2 c. milk
3 Tbsp. oil
1 egg white
Topping:
1/4 c. oats
1 Tbsp. brown sugar
1/8 tsp. cinnamon
1 Tbsp. butter, melted
Bake at 400 for 16-18 minutes

Recently, I made your apple muffins and took them with dinner to a family from my church. Their daughter just told me that they loved them...but her brother got 3 and she only got 1! Guess I'll be making them again.
