Orange Oatmeal Cake

My Mom often made this cake when we were growing up - and now I love to make it for my family! The smell this cake makes when it is baking is the epitome of Fall!

1 1/2 c. orange juice
1 c. oats
1/2 c. (1 stick) margarine
1 c. sugar
1/2 c. brown sugar
2 eggs
1 tsp. vanilla
1 3/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. cinnamon
1/2 c. chopped walnuts

Bring orange juice to a boil and pour over oats; set aside. Cream margarine and sugars until light. Beat in eggs and vanilla. Mix flour, baking powder, baking soda and cinnamon and add to egg mixture alternately with oat mixture. Stir in nuts and pour into greased 9" x 13" pan. Bake at 350 for 40 minutes or until done. While still slightly warm, top with orange glaze. (Add orange juice to 1 1/4 c. powdered sugar until spreadable consistency.)

This sounds so delicious, and I have all the ingredients (and lots of OJ to use up, it was such a good price at Costco that even if we did not drink one of the 4 x 1/5 gallons it was still worth it!)!

Any way, I think I will have to make this for a treat for my wonderful husband as he as a new job, but until we can sell our place and move he has to commute an hour and a half each way! So I am actively looking for a concrete way to bless him each day that is meaningful to him.

Today I think it will be cake!

Hi Kristy! Hope you and your husband enjoy this cake! I have a hard time using up OJ sometimes also - so I freeze it in 1 cup portions which is the perfect amount to make this cake and the glaze! Then, you can just thaw the one cup portion and make a fresh cake! Yummy!

The cake was such a big hit! I did not even feel bad giving some to our 16 month old (minus the glaze) as it was so delicious and filled with good things. The only thing I changed was to leave out the nuts as our daughter is severely allergic to peanuts and we have not tried other nuts yet. So we are careful to not have them around her as I really do not want to see the ER any time soon! :-)

My husband felt blessed and thought the cake was delicious, and I, of course, neglected to tell him how insanely easy it was!

Thank you so much for sharing this delicious recipe, and for the tip on freezing some of our OJ!

So now I need something for tomorrow....actually, I know a little chore I can do that will make him happy...
