Meat and Potato Quiche

My little ladies and I enjoyed a sweet girls lunch one day recently when Samuel had gone down for his nap. I really like quiche, but David is not a fan - so I treated us at lunch time with a yummy warm lunch!

This recipe is from the More with Less cookbook!


In a pie pan stir together: 3 c. shredded raw potato and 3 T. vegetable oil. Press into pie pan to create a crust shape. Bake at 425 for 15 minutes.

Over crust, sprinkle on: 1 c. shredded cheese, 3/4 c. ham or chicken, 1/4 c. chopped onion.

In a bowl whisk together: 1 c. evaporated milk (I used this substitute), 2 eggs, salt and pepper. Pour over other ingredients and sprinkle with parsley.

Bake for 30 minutes. Yum!

Looks great! i'm on a low carb diet so I would sub the potato for Cauliflower but wow what a nice treat to give the girls. And the table looks so cute! You really have an eye for making everyday special.

Looks like a delightful time!! :-) And I really like that book and similar ones from Elizabeth George! I recently purchased, "God's Wisdom for Little Girls" by her, and it is filled with darling illustrations of biblical virtues.

I have never made quiche, but this makes me want to try! Blessings to you and your sweet family.

This sounds like one I make called hashbrown quiche. Mine calls for eggs and milk and not the evaporated milk. I am blessed the my boys and DH like this. Ü We have used ham, sausage or bacon, just whatever we have on hand. Also whatever cheeses we have.

What a lovely way to spend time with your girls.

I am amazed at the amount of detail went into dressing your table for your girls' lunch. So often, I save the special touches for guests only. Since my daughter is home from school today, I hope to make a special lunch table for the two of us. It will be potato soup leftover from last night. But I am going to save that quiche recipe for another day. Sounds good! Have you ever used the frozen shredded potatoes?

I love quiche but have been staying away from the pie crust part because of my gluten allergy. I never thought to use potatoes for the crust. That was my "duh" moment today...lol Thanks for sharing the recipe!

I love the thought of a warm lunch. Exspecially with the fall chill coming soon. I will dido this idea soon. My boys have the Little Boys after God's own heart book (like the girls) and love Jim and Elizabeth George's writting. I have wanted to get the girls book for my daughter even though she is 17. Well, I'm so not a fan of quiche of any kind, but I'm in love with how you dressed your table up! Can you share your the secret of your table covering? It looks like a simple tablecloth, but there's nothing hanging over the edge? Do you have it secured under the table somehow? Love it!

I love quiche, too, and my son eats sushi, so my goodness, he should like this. I love the ease of the recipe. I"m trying this as soon as I get the potatoes.

Dear Ax Lady,

Thanks for loving the table! :) It is a thrift store find - redone. I painted the whole thing and stapled a piece of oil cloth over the top. So, it is pulled around the edges and stapled in place. I posted on it at some point - in May I think.
