Chicken Florentine

We had some local organic spinach recently and I wanted to come up with some yummy ways of using it! I love it in quiche - but since the rest of my family doesn't like quiche - I came up with this:

One chicken breast per person
Few strips of cooked bacon
Big handful fresh baby spinach
Mozzarella cheese: sliced or shredded
Cream of Chicken Soup or substitute for one can

Cook spinach in a little water until soft. Flatten chicken breasts to about 1/2 inch thickness. Turn over to underside and layer cooked spinach, cooked bacon and mozzarella. Roll up tight and place in a baking dish sprayed with non-stick cooking spray.

Top each piece of chicken with about 2 Tbsp. shredded mozzarella. Pour chicken soup into pan. Cover and bake until chicken is cooked through. I put mine in at 275 for about 2 hours while we were at church. It was very tasty, though I think ours turned out a bit dry since it was in there so long. Also, I prepared it the night before and put in the refrigerator overnight and as we were leaving for church put it in the oven.

I served this with steamed carrots and steamed broccoli for a yummy Sunday dinner.

Oh, and I tried Julia Child's recipe for Scalloped Potatoes with cream - delish!

I have never had chicken florentine before. Looks and sounds very tasty. I love those potatoes in the last pic. LOL, unfortunately my hips don't have the same love.

I made something years ago that used a flattened piece of chicken, a smearing of cream cheese with some kind of herb ...maybe chives and then some spinach. All this wrapped up in phyllo dough and baked. It was almost like a beef wellington idea, but with chicken. It was very good. I can look for the recipe if you are intersted.

It is fascinating to me that both you and Carrie like to eat spinach. I detest it and am quite certain I NEVER served it to you as children.

Yum! I have a recipe similar to this. You mix spinach, feta cheese, garlic, and mayo, and then stuff the chicken. Roll chicken in a paprika and flour mix (light cover), then wrap the bacon around the chicken. It's one of our favorites and I plan to make it this week.

Yours looks good, too. I will definitely try those potatoes!

I wonder if you covered with foil while you were at church? It doesn't look as nice and needs crisping at the end. I tend to over sauce things to try and keep moisture in for long bakes. Sometimes it great and well... sometimes everyone says, "looks yummy", when you know they're just being really polite!
I thought yours looked fancy!

Another (healthier) version is to switch the bacon out for some thinly sliced smoked ham. I also LOVE spinach; sounds delicious!

have you tried using spinach in green smoothies? It's amazing and gives you such a boost of energy. Just whirl some raw spinach in a bit of water and add cut up fruit. Blend everything and enjoy. I guess also the girls would like it (just be heavy on fuit)
