Butterscotch Bars

I had a taste for these recently after not making them for years! Mmmm - hope you enjoy them too!

Butterscotch Bars (from my Grandma):
1/2 c. shortening (or one stick butter or margarine)
1 package yellow cake mix
2 eggs
1/2 c. chopped nuts
2 T. hot water
3/4 c. butterscotch topping
Combine above ingredients and beat until creamy (will be sticky). Spread on a greased cookie sheet or jelly roll pan (or you can use two oblong cake pans). Bake at 350 degrees for 20-25 minutes. Cool completely.

2 c. powdered sugar
1/3 c. soft butter or margarine
3 T. butterscotch topping
2 T. milk
1/2 c. chopped nuts, if desired
Mix together well until creamy and spread on bars.

I also wanted to add, I've really missed all your crafts. I don't know if you are not having time to craft these days, but if you are, would you please share some more of what you are making. That is one feature about your blog, your crafting, that I've always enjoyed.

I am pretty sure that the Butterscotch Topping is the kind you use for ice cream topping :)

I have just found your blog through someone else. I would love to have those bars but I do not think that Weight Watchers has a point value for that. And who can eat just one so I will save my points and try them on a day when the kids take a nap for longer than 30 minutes.

Hi Ginger,

Butterscotch ice cream topping is what I use. However, I did a quick Google search and found out that you can make your own!

1 cup packed brown sugar
1/4 cup whipping cream
3 tablespoons butter (no substitutes)
2 tablespoons light corn syrup

In a heavy saucepan, combine all ingredients. Bring to a boil over medium heat; cook and stir for 3 minutes. Cool to room temperature. Cover and store in the refrigerator.

I don't know how much this makes - so it might be that you'd have to make several batches of this to equal enough to make the bars.

I hope you get to try these sometime, they are SO yummy! :)

I just made these today, and oh my word. SOO YUMMY!! Hopefully my hubby and I don't devour them all before we get together with our friends this weekend... :) Thanks so much for sharing this recipe! (I made it using a Pamela's Gluten Free Yellow cake mixed -- worked great!)
