Applesauce Pancakes

I made these Sunday morning for breakfast, and we all agreed that they were absolutely delicious! I made the batter the night before and stuck it in the fridge so it would go quickly before church Sunday. Enjoy!

1 c. all-purpose flour
1 T. sugar
1 1/2 tsp. baking powder
1/4 tsp. cinnamon
1 c. applesauce
1/4 tsp. vanilla extract
2 eggs
1 T. melted butter

Mix all together. Cook about 1/4 c. at a time on a hot griddle. Makes 8 pancakes. Recipe from this cookbook. I served them with my homemade syrup!

I made the BBQ chicken for lunch yesterday--very good.

I realized I mentioned Jody giving me leftover chicken, but not the rest of it. They ended up coming over for Sunday dinner, plus had two guests, so there were 10 adults, and we planned it a couple hours in advance. Worked out great, and we had a nice visit.

Yum! I need to try that recipe. The Germans only eat pancakes for lunch or Coffee time, (the German version of Tea Time).

So yummy! I also like to make the batter the night before, it saves so much headache in the morning! I'm going to have to try this recipe.

I have two huge boxes of apples to use up, so making homemade applesauce is one of my plans for the week. I can't wait to try this recipe using it! (I've already printed the recipe, so it'll be ready when I am!)
